Tired of deli meat recalls? Make your own! This recipe involves brining a whole turkey breast, seasoning it, cooking it (ideally on a rotisserie), then chilling and slicing it thin for delicious homemade deli meat.
1. To prepare the brine, combine 8 cups of water, ½ cup of kosher salt, ¼ cup of brown sugar, garlic, black peppercorns, bay leaves, and some Fire & Smoke Society Roasted Garlic seasoning in a large container.
2. Submerge the whole turkey breast in the brine and refrigerate overnight.
3. Remove the turkey breast from the brine and pat it completely dry with paper towels.
4. Season the dried turkey breast generously with Fire & Smoke Society Roasted Garlic seasoning.
5. Cook the turkey breast using a rotisserie (such as a RotoQ360) or another preferred method until the thickest part reaches an internal temperature of 165°F (74°C).
6. Allow the cooked turkey breast to cool down completely to room temperature.
7. Refrigerate the turkey breast until it is thoroughly chilled.
8. Once chilled, slice the turkey breast as thinly as possible for homemade deli meat.
